His journey began in 1975 when he left Nevis for St. Martin, landing his first job at a restaurant called Callaloo as a dishwasher. Over the next 15 years, he worked his way through the kitchen ranks, eventually returning to Nevis to open a restaurant of the same name. It was there that his fascination with roti began. Inspired by a Ghanese chef he worked with, Mr. Hill set out on a mission to create his own roti recipe—a journey that would span 20 years of dedication to perfecting the dough.

In 2012, Mr. Hill brought his talents to St. John, where he quickly became a beloved figure in the local culinary scene. From cooking breakfast and lunch at Caneel Bay Resort to working at Starfish Market and St. John Market, he honed his craft and connected with people through his food. A chance meeting with a couple from Trinidad further refined his technique, cementing his mastery of the art of roti.
Today, Mr. Hill still pours his heart and soul into his craft, preparing the dough for every roti in the quiet hours of the night. His commitment to excellence is unmatched. Known as “The Food Entertainer,” he takes immense pride in bringing joy to others through his cooking, sharing not just meals but the rich flavors and stories of the Caribbean.
